Ham & Egg

This was an awesome Pinterest find!~ And @ 100 calories or less each these are a great way to start off your day!~ These are super filling too!~

You can find the recipe here thesimpledelights...

**Changes I made:
1) To lower the Fat by 5g each I used 1 Egg White per cup instead of the whole egg, it also lowered the calories per cup by 64 calories.
2) I seasoned each cup with Parsley, Smoked Paprika, Sea Salt & Fresh Cracked Pepper
3) I used Tillamook Pepper-Jack instead of Parmesan
4) I used Black Forest Ham from Costco, and because the slices were larger I was able to cut them in half and use 1 half slice per cup. Cutting the fat and calories in half.

**My Version: 70 Calories 2.6g Fat per cup
(Fat content will vary based on the type in cheese you use and the amount, I split 1, 1oz slice between 8 cups)

Site-Seeing = Calories Burnt

Are you enjoying your state's beauty? I know it can be hard to find time for yourself. But if you are willing to make a few changes you can make the time. Go to bed earlier so that you can wake up earlier. Instead of reading a book, watching TV, or hanging out on the INTERNET, use that down time to get out and see what your state has to offer. This past weekend my husband & I spent some time in Snowmass Village, CO. It was a beautiful place, full of hills, steep inclines, walking paths & hiking trails. It was a Fluffy Bottom Girl's dream location. We set out on a early morning hike through the mountains. We saw flowers, swarms of butterflies, lovely running streams, and miles of vast green foliage covering the plains and mountain sides. The fresh mountain air was like breathing for the first time, sharp to the lungs because of its pureness. I enjoyed every second of our walk and then I enjoyed every moments of soreness for the following two days. So see what your state has to offer and get out there and enjoy life.

Food Matters Challenge

Diet can be a very confusing word. For a lot of people it means a quick way to lose weight. But, I see the word Diet as a plan for the way you eat. Everyone should have a Diet Plan. Having structure and understanding the foods you eat can help you lose, gain or maintain weight. But it can also cleanse our body. All of the processed foods dating back as far as you can remember, the chemicals in the things you wear, the things you clean with(both body & home), even the things you sit and sleep on have been building up toxins inside of you. These toxins can cause allergies, illnesses, and even cause you to be malnourished. I know its hard to believe that someone who is 25, 50, 100+lbs overweight can be malnourished. Most people think of someone malnourished to be very underweight. But when someone fills their body with foods high in fat, sodium, calories, and chemicals there is no nourishment found within these foods and their body suffers. Heart Disease, High blood pressure, High Cholesterol, & Type 2 Diabetes are very scary realities that even the thinest of us can still find ourselves in. It is never too late to "undo" what has been done. Our bodies are designed to "reboot". By just replacing a few of the processed foods in your diet with whole foods, you can dramatically change what is going on inside your body. I have never liked putting labels on the way I eat. I think it puts too much pressure on us and can discourage others. I know for some the word Vegan is a turn off. But really if you stop to think about it, all vegan means is that there was no animals products used in making the food. So, if you can still enjoy the same foods without using animal products, why not? It is cost effective, and you are not receiving the high amounts of animal fat and Casin, that are directly linked to heart disease and cancer. Now, I am not saying be a vegan. What I am saying is that there is an opportunity for you to cut back on some of the harmful things you eat, still be able to enjoy food and still have some of your guilty pleasures. As I mentioned earlier, by introducing certain foods into your diet you can help your body become stronger against illnesses from the common cold to cancer. Since, introducing these foods into my life I have not once gotten sick. Now, this is coming from someone who has been sick at least three times a year since I was five. I encourage to try new things. You don't have to like them, but you need to try them. Go by a juice bar and get a Juice, packed with live enzymes and protein, try cooking your veggies differently(steaming, boiling, baking), try eating raw fruits and veggies a couple times a week, replace your meat at least once with a soy product or a hormone-free, grass fed, free ranged animal product. You're probably wondering when I going to get to the cookbook pictured at the top, well here I go. This book was written by a vegan firefighter from Austin, TX. He is featured in the movie Food Matters & The Engine 2 Diet, I highly recommend watching them, I believe they can still be found on Netflix. He has some really great recipes for those of us trying to find healthy ways to enjoy our favorite foods without the harmful aftermath. I challenge you to try his book out through its entirety, a full 28 days. During this time you will see and feel a great improvement with your body!~ Take this challenge, you will learn there are food you don't like and foods you never thought you would until you tried. Good Luck and let us know how you do!~

Brain Food

Stressed out? School, work, family and finances are all reasons to be overwhelmed. If you're like me, your brain may feel like its set to Snap, Crackle & Pop!~ However, there are "Brain Foods" that can help you keep calm and focused.

 1) Coffee: The antioxidants and caffiene found in coffee can not only keep you focused, but researchers have found that it has preventive affects to protect your brain from dieases such as Alzheimer's.

2.) Chocolate: Researchers have known for awhile that chocolate can lower blood pressure causing your mind to be calm and sharp, but have recently found that as little as 1/3oz can prevent age related memory loss.

3.) Apples: These little beauties are chalk full of a plant chemical called quercetin. Quercetin is a great to get you brain juices flowing and it "defends your brain cells from free radical attacks which can damage the outer lining of delicate neurons and eventually lead to cognitive decline". Guess there is some truth to an apple an day!~

4.) Gum: While not actually a food, gum can help keep you focused on the task at hand. Gum can also help with cravings in between meals!~

Greens Please!~

Did you know that Broccoli is rich in calcium? It is also a great source of Beta Carotene & Vitamin C, two awesome antioxidants that aid your body in fighting off several cancers, heart disease and high blood pressure!~ But the Broccoli benefits don't stop there, just one cup on broccoli can boost your immune system and ward off illness, Annndd because it is high in potassium it can boost your brain function and help your body's muscles grow!~  What a Mighty Green Machine!~ Power to the day, and get in your serving of broccoli!~

For a quick lunch like mine warm up a bag of Lisa's Organic Broccoli & Gorgonzola Bleu Cheese with a cup of brown rice. (I had some left over from a previous meal, seasoned with garlic & parsley) Combine the two & enjoy!~
